Caramel Apple Pie Roll
The perfect dessert of all time: Caramel Apple Pie Roll!
Ingredients
6 large eggs
1 packet vanilla cake mix
½ cup oil
½ cup milk
1 tsp cinnamon
⅛ tsp all spice
¼ tsp nutmeg grated
2 tbsp butter
5 Granny Smith apples, peeled cored and diced
1 tsp cinnamon
2 tbsp brown sugar
1½ cups heavy cream
1 tbsp icing sugar
½ tsp cinnamon
Caramel Sauce
Instructions
- Pre-heat oven to 180ºC and line a 9x13”baking sheet with parchment paper
- Using a hand mixer whisk eggs together until light, pale and fluffy, about 5 minutes.
- Add the cake mix, oil, milk, cinnamon, allspice and nutmeg. Whisk until smooth. Pour ½ into the prepared baking sheet. (Make two or make some fluffy cupcakes if you want!)
- Bake for 12 minutes until spongy when touched and golden brown.
- Remove from the oven, sprinkle a clean tea towel with icing sugar. flip cake out onto bowl and cut a small slit in the bottom the cake. Roll into a log gently and let rest to cool
- Meanwhile, heat butter in a saute pan over medium heat. Add apples, cinnamon, and brown sugar. Cook until just softened, remove to cool.
- Unroll cake gently, spread apples evenly over cake and drizzle with caramel. Roll back up.
- Whip together cream, icing sugar and cinnamon to stiff peaks. Spread over cake.
- Drizzle caramel along the cake and take a toothpick through the caramel to make a design.
- Slice and serve
