Ingredients:
- 500 grams of all-purpose flour
- 1 packet of dry yeast
- 1 egg
- 4 tablespoons of granulated sugar (about 80 grams)
- 80 grams of butter (at room temperature)
- 1 packet of vanilla sugar
- 1 cup of lukewarm milk (200 ml)
For the almond filling:
- 1 cup of ground almonds (about 100 grams)
- Slightly less than 1 cup of sugar (about 130 grams)
- 100 grams of butter
For the topping
- 1 egg yolk
- 1 teaspoon of milk
- Blackberries
- Sliced almonds
Instructions:
- First, combine all the ingredients except for the butter in a mixing bowl and start kneading. Once the dough starts to come together, add the butter. Knead for about 5 minutes until the dough is smooth and elastic. Then, cover it and let it rise for 1 hour.
- While the dough is rising, prepare the almond filling by mixing all the ingredients together.
- After the dough has risen, roll it out into a rectangle. Spread the almond filling on half of the dough and fold the other half over it. Cut the dough into strips about 3 fingers wide. Make 3-4 cuts in each strip and then twist them around themselves to form spirals.
- Mix the egg yolk with milk and brush it over the pastries. Press blackberries onto the tops and sprinkle sliced almonds over them.
- Bake in a preheated oven at 180°C (350°F) for about 25-30 minutes until golden brown.
