Ingredients:
- 125g butter
- 1 egg
- 1/2 cup granulated sugar
- A pinch of salt
- 2 cups all-purpose flour
- 1 teaspoon baking powder
For the filling:
- 4 apples
- 3-4 tablespoons granulated sugar
- 1 teaspoon cinnamon
- 1 teaspoon cornstarch
- 1/4 cup water
Instructions:
- Peel and dice the apples into small cubes. In a small bowl, dissolve the cornstarch in water.
- Cook the diced apples, cinnamon, granulated sugar, and cornstarch mixture in a pan for 5-6 minutes until softened. Set aside to cool.
- Mix all the ingredients for the dough until well combined, then chill in the fridge for 30 minutes.
- Reserve a small portion of the dough and mix it with 2 tablespoons of flour to make the crumble topping.
- Divide the remaining dough into portions and press each portion into greased muffin molds, forming a crust. Use a fork to poke holes in the bottom of each crust.
- Fill each crust with the apple filling, then sprinkle the crumble topping over the apples.
- Bake in a preheated oven at 180°C (350°F) for about 30 minutes until golden brown.
