This easy Crustless Asparagus Quiche recipe is vegetarian and lower in carbohydrates while still providing a creamy, fresh taste!
Ingredients:
- 5 large organic eggs
- 3/4 cup organic whole milk
- 1 cup sharp cheddar cheese (shredded)
- 1/2 cup parmesan cheese (shredded)
- 2 tablespoons flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 bunch fresh organic asparagus (washed and cut into 1 inch pieces)
- 1/4 cup chopped onions
- 4 tablespoons butter
Instructions:
- Melt 2 tablespoons butter in a hot cast iron skillet.
- Toss in cut asparagus, and chopped onions. constantly stirring-sauteโ until tender. about 5-8 minutes.
- Whisk eggs, milk, flour and spices until well-blended. (no lumps)
- Generously grease all sides and bottom 9 inch glass pie plate with 2 tablespoons butter. Sprinkle grated parmesan cheese on the bottom of the pie pan.
- Combine sauteed asparagus, onions and cheddar cheese with egg mixture.
- Carefully pour egg mixture into pie plate.
- Bake for 20-25 minutes, or until eggs are cooked completely.
