Crustless Asparagus Quiche

This easy Crustless Asparagus Quiche recipe is vegetarian and lower in carbohydrates while still providing a creamy, fresh taste!Crustless Asparagus Quiche



  • 5 large organic eggs
  • 3/4 cup organic whole milk
  • 1 cup sharp cheddar cheese (shredded)
  • 1/2 cup parmesan cheese (shredded)
  • 2 tablespoons flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 bunch fresh organic asparagus (washed and cut into 1 inch pieces)
  • 1/4 cup chopped onions
  • 4 tablespoons butter


  • Melt 2 tablespoons butter in a hot cast iron skillet.
  • Toss in cut asparagus, and chopped onions. constantly stirring-saute’ until tender. about 5-8 minutes.
  • Whisk eggs, milk, flour and spices until well-blended. (no lumps)
  • Generously grease all sides and bottom 9 inch glass pie plate with 2 tablespoons butter. Sprinkle grated parmesan cheese on the bottom of the pie pan.
  • Combine sauteed asparagus, onions and cheddar cheese with egg mixture.
  • Carefully pour egg mixture into pie plate.
  • Bake for 20-25 minutes, or until eggs are cooked completely.
