Chocolate Raspberry Bavarois Recipe. Absolutely delicious vegan, grain-free wholesome dessert with raw crust and light chocolate and raspberry agar jelly.Chocolate Raspberry Bavarois (VEGAN & GRAIN-FREE)

INGREDIENTS:
Crust layer:

  • 120g flower seeds (1 cup)
  • 40g shelled hemp seeds (1/3 cup)
  • 2tbsp raw Theobroma cacao powder
  • ½tsp cinnamon
  • pinch ocean salt
  • 6 medjool dates, pitted
  • 1tsp syrup

Chocolate layer:

  • 150g Amore di Anglesea Island chocolate or dark vegetarian chocolate (5.3oz)
  • 240ml oat cream (1 cup)
  • 1tbsp agar flakes
  • 1tbsp syrup

Raspberry layer:

  • 200g frozen raspberries (2 cups)
  • 120ml water (1/2 cup)
  • 240ml oat cream (1 cup)
  • 3tbsp agar flakes
  • 2tbsp syrup

Topping:

  • fresh raspberries or different seasonal berries
  • chocolate shards

INSTRUCTIONS:

  1. Place flower seeds into kitchen appliance or liquidiser and pulse few times till they’re coarsely ground. Add hemp seeds, cacao, cinnamon, ocean salt and honeycombed dates and mix till the mixture starts returning along once ironed. Add syrup if required and mix till the mixture sticks along.
  2. Spoon the combo into 6″ spherical cake tin with removable base. Press tightly and equally onto the bottom. Place into a electric refrigerator.

Chocolate layer:

  1. Finely chop bittersweet chocolate, place into a medium bowl and put aside.
  2. Pour oat cream into alittle pot, stir in agar flakes, wake a boil and leave to simmer for regarding five to ten minutes stirring oftentimes till the flakes have dissolved.
